Strawberry Avocado Feta Salad with Pistachios & Crispy Onions

Warm, creamy, and perfectly spiced — this homemade creamer brings the cozy flavors of fall to every cup of coffee. Made with real pumpkin, maple syrup, and your favorite milk, it’s the perfect seasonal treat without the additives of store-bought versions.
1 cup unsweetened almond milk (or milk of choice)
½ cup canned pumpkin purée
2 tbsp maple syrup (or sweetener of choice)
1 tsp pumpkin pie spice*
½ tsp vanilla extract
Pinch of sea salt
*No pumpkin pie spice? Use a mix of cinnamon, nutmeg, ginger, and a touch of clove.
Combine Base: In a small saucepan over medium heat, whisk together almond milk and pumpkin purée until smooth.
Add Flavorings: Stir in maple syrup and pumpkin pie spice. Continue whisking until well combined.
Simmer Gently: Bring the mixture to a gentle simmer, stirring frequently. Do not let it boil.
Finish & Blend: Remove from heat. Stir in the vanilla extract and sea salt. Let cool slightly.
Blend for Smoothness: Transfer to a blender and blend on high for 20–30 seconds until frothy and fully emulsified.
Store: Pour into a mason jar or airtight container. Refrigerate and shake well before each use.
Add 1–2 tablespoons to hot or iced coffee.
Try in black tea for a creamy pumpkin chai twist.
