Kiwi Cream Layer Cake

Ingredients

Sponge Cake

  • 4 large eggs (room temperature)

  • ¾ cup (150 g) granulated sugar

  • 1 tsp vanilla extract

  • 1 cup (125 g) all-purpose flour

  • 1 tsp baking powder

  • ¼ tsp salt

  • 2 tbsp milk

  • A few drops green food coloring (optional)

Kiwi Jelly Layer

  • 3–4 fresh kiwis, peeled and diced

  • ½ cup (120 ml) water

  • ¼ cup (50 g) sugar

  • 1 tbsp lemon juice

  • 2 tsp gelatin powder

  • 2 tbsp cold water (for blooming gelatin)

Cream Filling

  • 2 cups (480 ml) heavy whipping cream

  • ½ cup (60 g) powdered sugar

  • 1 tsp vanilla extract

Syrup (for moist cake)

  • ¼ cup water

  • 2 tbsp sugar

  • 1 tsp lemon juice

Decoration

  • Fresh kiwi slices

  • Powdered sugar

  • White chocolate shavings (optional)

1. Bake the Sponge Cake

  1. Preheat oven to 350°F (175°C).

  2. Line an 8-inch cake pan with parchment paper.

  3. Beat eggs and sugar for 4–5 minutes until pale and fluffy.

  4. Mix in vanilla and milk.

  5. In another bowl combine:

    • flour

    • baking powder

    • salt

  6. Gently fold dry ingredients into the egg mixture.

  7. Add green food coloring if desired.

  8. Pour batter into pan and bake 20–25 minutes.

Let cake cool completely, then slice into 2–3 layers.


2. Make Kiwi Jelly

  1. Sprinkle gelatin over cold water and let bloom for 5 minutes.

  2. In a saucepan combine:

    • diced kiwi

    • water

    • sugar

    • lemon juice

  3. Cook for 3–4 minutes until kiwi softens.

  4. Remove from heat and stir in bloomed gelatin until dissolved.

  5. Let cool until slightly thick but still pourable.


3. Prepare the Whipped Cream

In a cold bowl beat:

  • heavy cream

  • powdered sugar

  • vanilla

Whip until soft peaks form.


4. Assemble the Cake

  1. Place first cake layer on serving plate.

  2. Brush with sugar syrup.

  3. Spread whipped cream.

  4. Add kiwi jelly layer.

  5. Place second cake layer on top.

  6. Repeat with cream and kiwi mixture.

Finish by frosting the entire cake with whipped cream.


5. Decorate

  • Arrange fresh kiwi slices on top.

  • Drizzle a little kiwi syrup or jelly.

  • Sprinkle powdered sugar or white chocolate.


Result:
A light, refreshing kiwi cream cake with layers of fluffy sponge, smooth whipped cream, and vibrant kiwi jelly.
