Crispy Parmesan Chicken with Garlic Butter Spaghetti

Ingredients (2–3 servings)

Chicken

  • 2 chicken breasts

  • ½ cup all-purpose flour

  • 2 eggs, beaten

  • 1 cup panko breadcrumbs

  • ½ cup grated Parmesan cheese

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • ½ tsp salt

  • ½ tsp black pepper

  • 3 tbsp olive oil

Spaghetti

  • 250 g spaghetti

  • 3 tbsp butter

  • 3 cloves garlic, minced

  • ¼ cup Parmesan cheese

  • 2 tbsp fresh parsley, chopped

  • Salt and pepper to taste

Roasted Tomato Topping

  • 1 cup cherry tomatoes

  • 1 tbsp olive oil

  • 1 clove garlic, minced

  • ½ tsp salt

  • ½ tsp Italian herbs

Garnish

  • Extra Parmesan cheese

  • Fresh basil or parsley


Instructions

1. Cook the Spaghetti

  1. Boil salted water in a large pot.

  2. Cook spaghetti according to package instructions.

  3. Drain and set aside.


2. Prepare the Chicken

  1. Slice chicken breasts horizontally to make thinner cutlets.

  2. Season with salt and pepper.

Prepare three bowls:

  • Bowl 1: flour

  • Bowl 2: beaten eggs

  • Bowl 3: panko + Parmesan + garlic powder + Italian seasoning

  1. Coat chicken in flour → egg → breadcrumb mixture.


3. Cook the Chicken

  1. Heat olive oil in a skillet over medium heat.

  2. Cook chicken 4–5 minutes per side until golden and crispy.

  3. Rest for 5 minutes, then slice.


4. Roast the Tomatoes

  1. In a small pan sauté:

    • cherry tomatoes

    • olive oil

    • garlic

    • Italian herbs.

  2. Cook 3–4 minutes until tomatoes soften and release juices.


5. Make Garlic Butter Spaghetti

  1. Melt butter in a pan.

  2. Add garlic and sauté 30 seconds.

  3. Toss in spaghetti.

  4. Add Parmesan and parsley, season with salt and pepper.


6. Assemble the Dish

  1. Plate the garlic butter spaghetti.

  2. Place crispy sliced chicken on top.

  3. Spoon roasted cherry tomatoes over the chicken.


7. Garnish

Finish with:

  • grated Parmesan

  • fresh parsley or basil.


Tips

  • Add lemon zest to the pasta for brightness.

  • Use air fryer at 200°C for 12–15 minutes for the chicken instead of frying.

  • Mix cream into the pasta for a creamy version.
