Red Velvet Chocolate Lava Cookies

Ingredients

Dry Ingredients

  • 1 ¾ cups (220 g) all-purpose flour

  • ¼ cup (25 g) unsweetened cocoa powder

  • 1 tsp baking soda

  • ½ tsp salt

Wet Ingredients

  • ½ cup (115 g) unsalted butter, softened

  • ¾ cup (150 g) granulated sugar

  • ¼ cup (50 g) brown sugar

  • 1 large egg

  • 1 egg yolk

  • 1 tbsp milk

  • 1 ½ tsp vanilla extract

  • 1 tsp white vinegar

  • 1–1 ½ tsp red food coloring (gel preferred)

Chocolate Filling

  • 150 g dark chocolate chunks or chocolate squares

  • ½ cup chocolate chips (optional for topping)


Instructions

1. Prepare the Oven

  • Preheat oven to 175°C / 350°F.

  • Line a baking tray with parchment paper.

2. Mix the Dry Ingredients

In a medium bowl whisk together:

  • flour

  • cocoa powder

  • baking soda

  • salt

Set aside.

3. Cream Butter and Sugars

In a large bowl:

  • Beat butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).

4. Add Wet Ingredients

Mix in:

  • egg

  • egg yolk

  • vanilla extract

  • milk

  • vinegar

  • red food coloring

Beat until the mixture becomes smooth and vibrant red.

5. Combine the Dough

  • Gradually add the dry ingredients into the wet mixture.

  • Mix until just combined (do not overmix).

6. Shape the Cookies

  1. Scoop about 2 tablespoons of dough.

  2. Flatten slightly in your palm.

  3. Place 1–2 chunks of dark chocolate in the center.

  4. Wrap dough around the chocolate and roll into a ball.

  5. Place on the baking tray and gently flatten.

Add extra chocolate chunks on top for a bakery-style look.

7. Bake

Bake for 10–12 minutes until:

  • edges are set

  • centers remain soft.

8. Cool

  • Let cookies cool on the tray for 5–10 minutes.

  • The chocolate inside will stay molten and gooey.


Tips for Perfect Cookies

  • Use gel food coloring for deeper red color.

  • Chill dough 30 minutes for thicker cookies.

  • Use dark chocolate bars instead of chips for the best lava center.

  • Slightly undercook for the gooey texture.
