For the Ube Jelly
1 cup ube juice or diluted ube flavor extract
2 tablespoons sugar (adjust to taste)
1 teaspoon agar-agar powder (or gelatin)
For the Creamy Milk Base
1 cup whole milk or coconut milk
2 tablespoons sweetened condensed milk (or sugar to taste)
1/4 cup ube halaya (ube jam) or ube powder mixed with milk
For Serving
Ice cubes
Extra milk or coconut milk (optional)
In a small saucepan, combine ube juice, sugar, and agar-agar powder.
Bring to a gentle boil while stirring continuously.
Cook for 2–3 minutes until fully dissolved.
Pour the mixture into a shallow dish and let it cool until set.
Once firm, cut the jelly into small cubes.
In a bowl, whisk together milk, condensed milk, and ube halaya until smooth.
Taste and adjust sweetness if needed.
Fill a glass with ice cubes.
Add a generous layer of ube jelly cubes.
Pour the creamy ube milk over the jelly.
Top with extra milk or coconut milk if desired.
Coconut milk enhances the tropical flavor.
For extra texture, add tapioca pearls or nata de coco.
Chill all ingredients before serving for best taste.
