Creamy Garlic Chicken with Broccoli

Ingredients

Main

  • 2 large chicken breasts, cut into bite-size cubes

  • 2 cups broccoli florets

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • 2 tbsp butter

Cream Sauce

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • ½ tsp black pepper

  • ½ tsp salt

Optional (for thicker sauce)

  • 1 tsp cornstarch + 1 tbsp water

Garnish

  • chopped parsley

  • extra Parmesan


Instructions

1. Cook the Broccoli

  1. Bring a small pot of water to a boil.

  2. Add broccoli and cook 2 minutes until bright green.

  3. Drain and set aside.

(You can also steam it for a firmer texture.)


2. Sear the Chicken

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Season chicken with salt and pepper.

  3. Cook chicken pieces for 5–6 minutes until golden brown.

  4. Remove from the pan and set aside.


3. Make the Garlic Base

  1. In the same pan, melt butter.

  2. Add minced garlic.

  3. Cook for 30–40 seconds until fragrant.


4. Make the Cream Sauce

Add to the pan:

  • chicken broth

  • heavy cream

  • Italian seasoning

  • Parmesan cheese

Stir well and simmer for 3–4 minutes until slightly thickened.

(For a thicker sauce, add the cornstarch mixture and stir.)


5. Combine Everything

  1. Return chicken to the pan.

  2. Add broccoli.

  3. Toss everything together so the sauce coats the chicken and vegetables.

  4. Simmer 2–3 minutes.


6. Serve

Serve hot with:

  • steamed rice

  • pasta

  • mashed potatoes

  • or low-carb cauliflower rice

Top with parsley and extra Parmesan.
