2 large chicken breasts, cut into bite-size cubes

2 cups broccoli florets

3 cloves garlic, minced

2 tbsp olive oil
-
2 tbsp butter
Cream Sauce
-
1 cup heavy cream
-
½ cup chicken broth
-
½ cup grated Parmesan cheese
-
1 tsp Italian seasoning
-
½ tsp black pepper
-
½ tsp salt
Optional (for thicker sauce)
-
1 tsp cornstarch + 1 tbsp water
Garnish
-
chopped parsley
-
extra Parmesan
Instructions

1. Cook the Broccoli
-
Bring a small pot of water to a boil.
-
Add broccoli and cook 2 minutes until bright green.
-
Drain and set aside.
(You can also steam it for a firmer texture.)
2. Sear the Chicken
-
Heat olive oil in a large skillet over medium-high heat.
-
Season chicken with salt and pepper.
-
Cook chicken pieces for 5–6 minutes until golden brown.
-
Remove from the pan and set aside.
3. Make the Garlic Base
-
In the same pan, melt butter.
-
Add minced garlic.
-
Cook for 30–40 seconds until fragrant.
4. Make the Cream Sauce
Add to the pan:
-
chicken broth
-
heavy cream
-
Italian seasoning
-
Parmesan cheese
Stir well and simmer for 3–4 minutes until slightly thickened.
(For a thicker sauce, add the cornstarch mixture and stir.)
5. Combine Everything
-
Return chicken to the pan.
-
Add broccoli.
-
Toss everything together so the sauce coats the chicken and vegetables.
-
Simmer 2–3 minutes.
6. Serve
Serve hot with:

steamed rice
-
pasta
-
mashed potatoes
-
or low-carb cauliflower rice
Top with parsley and extra Parmesan.
