Ingredients

Main

  • 200 g fresh salmon, cut into cubes (sushi-grade if raw)

  • 1 avocado, diced

  • 1 orange, peeled and segmented

  • ½ cup pomegranate seeds

  • 1 cup arugula or mixed greens

Dressing

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp honey

  • ½ tsp salt

  • ½ tsp black pepper

Garnish

  • chopped parsley or dill

  • chili flakes (optional)


Instructions

1. Prepare the Ingredients

  • Cut salmon into bite-size cubes.

  • Dice the avocado.

  • Segment the orange and remove seeds.


2. Make the Dressing

In a small bowl whisk together:

  • olive oil

  • lemon juice

  • honey

  • salt and pepper.


3. Assemble the Salad

In a large bowl combine:

  • salmon cubes

  • avocado

  • orange segments

  • pomegranate seeds

  • arugula


4. Dress the Salad

Drizzle the dressing over the salad and gently toss to combine.


5. Garnish and Serve

Top with chopped herbs and a pinch of chili flakes if desired.

Serve immediately.
