Garlic Chili Braised Pork Ribs
Ingredients

700 g pork ribs, cut into small sections
-
4 cloves garlic, minced
-
1 tbsp ginger, minced
-
2 tbsp soy sauce
-
1 tbsp oyster sauce
-
1 tbsp dark soy sauce (for color)
-
1 tbsp brown sugar or honey
-
1 tsp chili flakes or chopped red chili
-
1 tbsp rice vinegar
-
1 tbsp sesame oil
-
2 tbsp vegetable oil
-
2 green onions, chopped
-
½ cup water or broth
Instructions

1. Sear the Ribs
-
Heat oil in a pan or wok.
-
Add pork ribs and sear until lightly browned on all sides.
2. Cook Aromatics
Add:
-
garlic
-
ginger
-
chili
Stir-fry until fragrant.
3. Make the Sauce
Add to the pan:
-
soy sauce
-
oyster sauce
-
dark soy sauce
-
brown sugar
-
rice vinegar
Mix well so the ribs are coated.
4. Braise
-
Pour in water or broth.
-
Cover and simmer 25–30 minutes until ribs are tender.
5. Reduce Sauce
Remove the lid and cook a few more minutes until the sauce becomes thick and sticky.
6. Finish
Drizzle with sesame oil and sprinkle chopped green onions before serving.
