Garlic Chili Braised Pork Ribs

Ingredients

  • 700 g pork ribs, cut into small sections

  • 4 cloves garlic, minced

  • 1 tbsp ginger, minced

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tbsp dark soy sauce (for color)

  • 1 tbsp brown sugar or honey

  • 1 tsp chili flakes or chopped red chili

  • 1 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 2 tbsp vegetable oil

  • 2 green onions, chopped

  • ½ cup water or broth


Instructions

1. Sear the Ribs

  1. Heat oil in a pan or wok.

  2. Add pork ribs and sear until lightly browned on all sides.


2. Cook Aromatics

Add:

  • garlic

  • ginger

  • chili

Stir-fry until fragrant.


3. Make the Sauce

Add to the pan:

  • soy sauce

  • oyster sauce

  • dark soy sauce

  • brown sugar

  • rice vinegar

Mix well so the ribs are coated.


4. Braise

  1. Pour in water or broth.

  2. Cover and simmer 25–30 minutes until ribs are tender.


5. Reduce Sauce

Remove the lid and cook a few more minutes until the sauce becomes thick and sticky.


6. Finish

Drizzle with sesame oil and sprinkle chopped green onions before serving.

  • Sticky sweet-savory glaze

  • Perfect with steamed rice.
