Peach Chocolate Cream Layer Cake

Ingredients

Sponge Cake

  • 2 cups all-purpose flour

  • 1 ½ tsp baking powder

  • ¼ tsp salt

  • ¾ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • ¾ cup whole milk


Peach Filling

  • 2 cups fresh peaches, diced

  • 3 tbsp sugar

  • 1 tbsp lemon juice

  • 1 tsp cornstarch

  • 2 tbsp water


Cream Filling

  • 2 cups heavy whipping cream

  • ½ cup powdered sugar

  • 1 tsp vanilla extract


Chocolate Ganache

  • 1 cup dark chocolate chips

  • ¾ cup heavy cream

  • 1 tbsp butter


Instructions

1. Bake the Cake

  1. Preheat oven to 350°F (175°C).

  2. Grease and line a square or round cake pan.

  3. In a bowl mix:

    • flour

    • baking powder

    • salt.

  4. In another bowl beat:

    • butter

    • sugar
      until light and fluffy.

  5. Add eggs one at a time, then vanilla.

  6. Add dry ingredients alternating with milk.

  7. Pour batter into pan and bake 25–30 minutes.

  8. Let cake cool completely before assembling.


2. Make the Peach Filling

  1. In a saucepan combine:

    • diced peaches

    • sugar

    • lemon juice.

  2. Cook for 4–5 minutes.

  3. Mix cornstarch with water and add to the pan.

  4. Cook until thick and jam-like.

  5. Let cool.


3. Make the Cream

Whip together:

  • heavy cream

  • powdered sugar

  • vanilla

until soft peaks form.


4. Prepare Chocolate Ganache

  1. Heat heavy cream until just steaming.

  2. Pour over chocolate chips.

  3. Let sit 1 minute, then stir until smooth.

  4. Add butter and mix.


5. Assemble the Cake

  1. Slice the sponge cake into 3 layers.

  2. Layer in this order:

Layer 1

  • sponge cake

  • whipped cream

  • peach filling

Layer 2

  • sponge cake

  • cream

  • peaches

Layer 3

  • sponge cake.


6. Add the Ganache

Pour chocolate ganache over the top and let it drip down the sides.

Decorate with:

  • fresh peach slices

  • extra cream if desired.
