1. Mix the chia base
In a bowl or jar, whisk together the coconut milk, chia seeds, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well to prevent clumping.
2. Chill and set
Cover and refrigerate for at least 3–4 hours, or overnight, until the mixture thickens into a pudding-like consistency. Stir once after 30 minutes for a smoother texture.
3. Prepare the mango
Blend half of the mango into a smooth puree. Keep the remaining mango diced for layering or topping.
4. Assemble
Spoon chia pudding into serving glasses. Add a layer of mango puree, then top with fresh mango chunks.
5. Serve
Enjoy chilled. Add optional toppings for extra texture and flavor.
