Just eggs, 150g Greek yogurt, and flour. A simple and delicious cake!

Ingredients You’ll Need

  • 3 large eggs , room temperature
  • 150g Greek yogurt (plain or vanilla-flavored)
  • 150g all-purpose flour
  • 100g granulated sugar (adjust to taste)
  • 1 tsp vanilla extract (optional, but enhances flavor)
  • 1/2 tsp baking powder (optional, for extra lift)
  • Pinch of salt
  • Optional Add-Ins : Lemon zest, cinnamon, chocolate chips, or fresh berries.
 

Step-by-Step Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 350°F (175°C) . Grease a loaf pan or round cake pan and line it with parchment paper for easy removal.
 

Step 2: Mix Wet Ingredients

  1. In a large mixing bowl, whisk the eggs and sugar together until light and frothy.
  2. Stir in the Greek yogurt and vanilla extract until smooth and well combined.
 

Step 3: Add Dry Ingredients

  1. Sift the flour, baking powder (if using), and a pinch of salt into the wet mixture.
  2. Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix—the batter should be smooth and slightly thick.
 

Step 4: Optional Add-Ins

  1. If desired, fold in extras like lemon zest, cinnamon, chocolate chips, or fresh berries.
 

Step 5: Bake

  1. Pour the batter into the prepared pan and smooth the top with a spatula.
  2. Bake for 30–35 minutes , or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
 

Step 6: Cool & Serve

  1. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  2. Slice and serve plain, dusted with powdered sugar, or topped with honey, jam, or fresh fruit.
