Fruit Tart Recipe

A delightful dessert featuring a buttery tart shell filled with smooth, creamy pastry cream, topped with fresh fruits. Perfect for any occasion!
Tart Shell:
1 1/4 cups all-purpose flour
1/4 cup powdered sugar
1/2 cup cold butter, cut into small cubes
1-2 tbsp cold water (as needed)
Directions for Tart Shell:
In a large bowl, mix flour and powdered sugar.
Add cold butter and mix until the mixture resembles breadcrumbs.
Gradually add cold water (1 tbsp at a time) and mix until the dough comes together.
Form the dough into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
Preheat oven to 375°F (190°C).
Roll out the dough on a lightly floured surface to fit a tart pan. Press it into the pan, trimming any excess dough.
Bake for 25 minutes, or until golden. Let it cool completely.
Pastry Cream:
1 cup milk
1 tsp vanilla extract
3 egg yolks
1/4 cup sugar
2 tbsp cornstarch
1 tbsp butter
Directions for Pastry Cream:
In a saucepan, heat milk and vanilla over medium heat until it just starts to simmer.
In a separate bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
Gradually pour the hot milk into the egg mixture while whisking constantly.
Return the mixture to the saucepan and cook over medium heat, whisking constantly until it thickens.
Remove from heat and stir in butter until smooth.
Allow the pastry cream to cool to room temperature, then chill it in the fridge.
Assemble the Tart:
Once the tart shell and pastry cream are cooled, fill the tart shell with the pastry cream.
Top with fresh fruits such as strawberries, kiwis, mangoes, and blackberries.
Optionally, you can prepare a glaze by heating apricot jam with a little water until it melts. Brush it over the fruit for a shiny finish.
Chill & Serve:
Refrigerate the tart for at least an hour to set.
Slice and serve chilled!
