1/4 tsp salt
4 large eggs
3/4 cup granulated sugar
1/4 cup buttermilk
1 tsp vanilla extract
1 tsp red food coloring
For the Cream Cheese Filling:
8 oz cream cheese, softened
4 tbsp unsalted butter, softened
1 cup powdered sugar
1 tsp vanilla extract Instructions:
Preheat & Prepare:
Preheat your oven to 350°F (177°C).
Line a jelly roll pan with parchment paper.
Make the Cake Batter:
In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, and salt.
In a separate large bowl, beat the eggs and granulated sugar until the mixture is light and fluffy.
Stir in the buttermilk, vanilla extract, and red food coloring until well combined.
Gradually fold in the dry ingredients until the batter is smooth.
Bake:
Pour the batter into the prepared pan and spread it evenly.
Bake for 12–15 minutes, or until a toothpick inserted into the center comes out clean.
Roll & Cool:
While the cake is still warm, carefully roll it up in the parchment paper to form a tight log.
Allow the cake roll to cool completely.
Prepare the Filling:
In a mixing bowl, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until the filling is smooth and creamy.
Assemble the Cake Roll:
Unroll the cooled cake gently.
Spread an even layer of the cream cheese filling over the cake.
Re-roll the cake tightly.
Chill & Serve:
Refrigerate the assembled cake roll for at least 1 hour to set the filling.
Slice into rounds and serve.
