
Ingredients
For the Cake:
1 cup (226g) unsalted butter, softened
1 (8 oz) package cream cheese, softened
2 ½ cups granulated sugar
5 large eggs, at room temperature
3 cups all-purpose flour, sifted
½ tsp salt
1 tsp vanilla extract
½ tsp almond extract (optional, for depth of flavor)
½ cup crushed pineapple, well-drained
½ cup diced fresh strawberries
¼ cup sour cream or buttermilk
½ cup whole milk, room temperature
For the Glossy Pink Glaze:
1 cup powdered sugar, sifted
2 tbsp pineapple juice (or milk for a creamier glaze)
½ tsp vanilla extract
A few drops of red food coloring (for vibrant pink color)
½ cup fresh whole strawberries (for garnish)
Instructions

Preheat & Prepare the Pan
Preheat the oven to 325°F (163°C).
Grease and flour a 9-inch bundt pan or round cake pan, or line with parchment paper.

Cream the Butter & Sugar
In a large mixing bowl, cream together butter, cream cheese, and sugar using an electric mixer on medium speed. Beat for 5 minutes until light and fluffy.

Add Eggs One at a Time
Add eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.

Mix Dry & Wet Ingredients
In a separate bowl, whisk together flour and salt.
Gradually add the dry ingredients to the butter mixture, alternating with milk and sour cream.
Mix until just combined (do not overmix).

Add the Fruit
Gently fold in drained pineapple and diced strawberries until evenly distributed.

Bake the Cake
Pour the batter into the prepared pan and smooth the top.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 15 minutes, then turn it out onto a wire rack to cool completely.

Make the Pink Glaze


In a bowl, whisk together powdered sugar, pineapple juice, vanilla extract, and food coloring until smooth.

Adjust consistency—add more powdered sugar if too thin or more juice if too thick.

Final Assembly & Decoration

Drizzle the glaze generously over the cooled cake, allowing it to flow smoothly down the sides.

Gently press whole strawberries on top for a luxurious, bakery-style look.

Let set for 15 minutes, then slice and enjoy!
