- 1 cup crushed pineapple (drained well)
- 1½ cups sweetened shredded coconut (+ extra for rolling)
- ¼ cup sweetened condensed milk
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
Step 1: Drain the Pineapple
- Place the crushed pineapple in a fine-mesh strainer or cheesecloth and press out as much liquid as possible. You want the pineapple to be as dry as possible to prevent the mixture from becoming too wet.
Step 2: Mix the Ingredients
- In a medium mixing bowl, combine the drained crushed pineapple, 1½ cups of shredded coconut, sweetened condensed milk, powdered sugar, vanilla extract, and a pinch of salt.
- Stir until all ingredients are evenly combined. The mixture should hold together when squeezed in your hand. If it feels too sticky, add a little more shredded coconut, 1 tablespoon at a time, until the desired consistency is reached.
Step 3: Form the Balls
- Scoop out about 1–2 tablespoons of the mixture at a time and roll it into smooth balls using your hands.
- Roll each ball in additional shredded coconut to coat the outside evenly.
Step 4: Chill
- Place the coated balls on a baking sheet or plate lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up before serving.
Step 5: Serve and Enjoy
- Once chilled, transfer the balls to an airtight container and store them in the refrigerator.
- Serve cold or at room temperature as a sweet snack or dessert. Pair with a tropical drink for a mini vacation in every bite!
