How to Prepare Pumpkin Fritters

Pumpkin fritters are a classic sweet treat, perfect to enjoy with a hot drink. With their soft, fluffy texture and sweet coating of sugar and cinnamon, they are simply delightful!

First, ensure the pumpkin is cooked and mashed into a purée. You can boil, roast, or microwave it until soft. Once cooked, drain any excess water to make it as dry as possible. Mash the pumpkin with a fork until smooth.

In a large bowl, add the egg and sugar. Whisk for a few minutes until the mixture becomes fluffy and slightly pale. Add a few drops of vanilla extract or, if preferred, some lemon or orange zest.

Incorporating the Pumpkin

Add the pumpkin purée to the bowl and mix well.

Sift the flour and baking powder directly into the pumpkin mixture. Stir until the flour is fully incorporated; at first, the batter will be thick but will soften as it absorbs the liquid ingredients. Gradually add the pumpkin cooking water (or milk if unavailable), adding only as much as needed to achieve a soft, slightly dense batter. The batter should be manageable with a spoon but not too runny.

Frying the Fritters

In a deep pan or pot, heat a generous amount of oil. The oil should be hot but not too much, allowing the fritters to cook evenly inside without burning on the outside (medium-high heat).

Using two spoons, scoop small portions of batter and carefully drop them into the hot oil. Try to keep them similar in size for even cooking. Let the fritters fry until golden and fluffy, flipping them if needed to ensure even cooking. Remove them and place them on a plate lined with paper towels to absorb excess oil.
