
Spicy Shrimp & Roasted Sweet Potatoes ๐ค๐ ๐ฅ
A protein-packed, nutrient-dense meal with a perfect balance of spice, sweetness, and freshness. This dish is great for meal prep or a flavorful weeknight dinner!
Ingredients (Serves 2-3)
For the Shrimp:

12 oz (340g) shrimp, peeled & deveined ๐ค

1 tablespoon olive oil

2 cloves garlic, minced ๐ง

½ teaspoon smoked paprika

¼ teaspoon chili flakes (adjust to taste) ๐ฅ

¼ teaspoon salt
โ
¼ teaspoon black pepper
For the Roasted Sweet Potatoes & Peppers:

1 medium sweet potato, peeled & diced ๐

1 red bell pepper, sliced ๐ถ๏ธ

1 tablespoon olive oil
โ
½ teaspoon smoked paprika
โ
¼ teaspoon salt
โ
¼ teaspoon black pepper
For the Steamed Vegetables:

1 cup broccoli florets ๐ฅฆ
โ
1 cup sugar snap peas ๐ฑ
โ
½ teaspoon salt
For the Soft-Boiled Eggs:
โ 2 large eggs ๐ฅ
For the Garlic Lime Dressing:

2 tablespoons olive oil
โ
1 tablespoon fresh lime juice ๐
โ
1 clove garlic, minced ๐ง
โ
½ teaspoon honey (optional)

¼ teaspoon salt

¼ teaspoon black pepper
Instructions
1๏ธโฃ Roast the Sweet Potatoes & Bell Peppers

Preheat your oven to 400°F (200°C).

Toss diced sweet potatoes and sliced red bell pepper with olive oil, smoked paprika, salt, and black pepper.

Spread on a baking sheet and roast for 20-25 minutes, flipping halfway, until tender and slightly crispy.
2๏ธโฃ Cook the Shrimp

Heat 1 tablespoon olive oil in a skillet over medium-high heat.

Add garlic, shrimp, smoked paprika, chili flakes, salt, and pepper.

Sauté for 3-4 minutes per side until shrimp are opaque and slightly golden.
3๏ธโฃ Steam the Vegetables

Bring a small pot of water to a boil.

Add broccoli florets and sugar snap peas, steam for 3-4 minutes until bright green and tender-crisp.

Drain and set aside.
4๏ธโฃ Soft-Boil the Eggs

Bring a pot of water to a gentle boil.

Carefully lower in the eggs and boil for 6½ to 7 minutes for a jammy yolk.

Transfer eggs to an ice bath for 2 minutes, then peel and slice.

Whisk together olive oil, lime juice, minced garlic, honey (if using), salt, and black pepper in a small bowl.

Divide roasted sweet potatoes, sautéed shrimp, steamed veggies, and soft-boiled eggs between bowls.
