Spicy Shrimp & Roasted Sweet Potatoes ๐Ÿค๐Ÿ ๐Ÿ”ฅ

A protein-packed, nutrient-dense meal with a perfect balance of spice, sweetness, and freshness. This dish is great for meal prep or a flavorful weeknight dinner!

Ingredients (Serves 2-3)

For the Shrimp:

โœ… ½ teaspoon smoked paprika

โœ… ¼ teaspoon black pepper

For the Roasted Sweet Potatoes & Peppers:

โœ… 1 medium sweet potato, peeled & diced ๐Ÿ 
โœ… 1 red bell pepper, sliced ๐ŸŒถ๏ธ
โœ… 1 tablespoon olive oil
โœ… ½ teaspoon smoked paprika
โœ… ¼ teaspoon salt
โœ… ¼ teaspoon black pepper

For the Steamed Vegetables:

โœ… 1 cup broccoli florets ๐Ÿฅฆ
โœ… 1 cup sugar snap peas ๐ŸŒฑ
โœ… ½ teaspoon salt

For the Soft-Boiled Eggs:

โœ… 2 large eggs ๐Ÿฅš

For the Garlic Lime Dressing:

โœ… 2 tablespoons olive oil
โœ… 1 tablespoon fresh lime juice ๐Ÿ‹

Instructions

1๏ธโƒฃ Roast the Sweet Potatoes & Bell Peppers

  1. Preheat your oven to 400°F (200°C).

  2. Toss diced sweet potatoes and sliced red bell pepper with olive oil, smoked paprika, salt, and black pepper.

  3. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway, until tender and slightly crispy.

2๏ธโƒฃ Cook the Shrimp

  1. Heat 1 tablespoon olive oil in a skillet over medium-high heat.

  2. Add garlic, shrimp, smoked paprika, chili flakes, salt, and pepper.

  3. Sauté for 3-4 minutes per side until shrimp are opaque and slightly golden.

3๏ธโƒฃ Steam the Vegetables

  1. Bring a small pot of water to a boil.

  2. Add broccoli florets and sugar snap peas, steam for 3-4 minutes until bright green and tender-crisp.

  3. Drain and set aside.

4๏ธโƒฃ Soft-Boil the Eggs

  1. Bring a pot of water to a gentle boil.

  2. Carefully lower in the eggs and boil for 6½ to 7 minutes for a jammy yolk.

  3. Transfer eggs to an ice bath for 2 minutes, then peel and slice.

5๏ธโƒฃ Make the Garlic Lime Dressing

  1. Whisk together olive oil, lime juice, minced garlic, honey (if using), salt, and black pepper in a small bowl.

  • Divide roasted sweet potatoes, sautéed shrimp, steamed veggies, and soft-boiled eggs between bowls.
