BEEF SOUP (CALDO DE RES) ๐Ÿ˜‹

Ingredients:

  • 1.5 kg (about 3.3 lbs) beef (you can use shank, chuck, or short ribs)

  • 2 corn cobs, cut into chunks

  • 3 medium potatoes, peeled and cubed

  • 2 carrots, peeled and sliced

  • 2 zucchini, sliced

  • ½ small cabbage (optional)

  • 1 large tomato, chopped

  • ¼ onion

  • 2 garlic cloves, minced

  • 2 sprigs of fresh cilantro

  • 1 bay leaf

  • Salt and pepper to taste

  • Limes (for serving)

  • 2 tablespoons of oil

  • 8 cups of water (about 2 liters)


Preparation:

  1. Wash the beef pieces thoroughly under running water.

  2. In a large pot, add the beef and 8 cups of water. Bring to a boil, then reduce the heat. Simmer for about 1 hour, or until the meat is tender and nearly fully cooked.

  3. While the meat cooks, in a separate pan, heat 2 tablespoons of oil and sauté the tomato, onion, and garlic until golden and fragrant. This will add extra flavor to the broth.

  4. Once the meat is cooked, add the carrots, potatoes, corn chunks, zucchini, bay leaf, and the tomato sauté to the pot. Cook everything together for another 30–40 minutes, until the vegetables are soft.

  5. Season with salt and pepper to taste. If desired, you can also add some beef bouillon powder or cubes for extra flavor.

  6. Add the fresh cilantro sprigs in the final minutes of cooking so they release their aroma into the soup.

  7. Once everything is cooked and well-seasoned, serve the hot soup with pieces of beef, vegetables, and corn in each bowl.

  8. Serve with lime wedges so everyone can squeeze fresh lime juice to taste. ๐Ÿ‹
