For the caramel:

For the flan:

1 can (397 g / 14 oz) sweetened condensed milk

1 can (360 ml / 12 oz) evaporated milk

5 large eggs

1 tablespoon vanilla extract

1/2 cup whole milk (optional, for a creamier texture)

1. Make the caramel:
In a saucepan over medium heat, add the sugar and water without stirring.
Let it melt slowly until it becomes golden caramel. Do not mix with a spoon—just gently swirl the pan.
Once it turns amber, quickly pour it into your flan mold (or individual molds), coating the base evenly.
Set aside while you prepare the flan mixture.
2. Prepare the flan mixture:
In a bowl, beat the eggs and vanilla until well combined.
Add the condensed milk, evaporated milk, and whole milk, and mix until fully incorporated.
Strain the mixture through a fine sieve to remove bubbles for a smoother flan.
3. Cook the flan:
Pour the mixture over the set caramel in the mold.
Cover the mold with aluminum foil.
Place the mold inside a larger baking dish filled with hot water (bain-marie method).
Bake at 180°C (350°F) for 60 minutes, or until a knife inserted in the center comes out clean.
4. Cool and unmold:
Let the flan cool to room temperature, then refrigerate for at least 4 hours (best if overnight).
To unmold, run a knife around the edges and invert onto a large plate.
