Egg & Avocado Sriracha Toast ๐Ÿณ๐Ÿ”ฅ๐Ÿฅ‘

A delicious, nutritious, and easy-to-make breakfast or snack with creamy avocado, a perfectly cooked egg, and a spicy Sriracha kick!

Ingredients (Serves 1)

โœ… 1 slice whole-grain bread ๐Ÿž
โœ… ½ avocado, mashed ๐Ÿฅ‘
โœ… 1 fried or poached egg ๐Ÿณ
โœ… ½ teaspoon Sriracha sauce ๐ŸŒถ (adjust to taste)
โœ… Salt & pepper to taste ๐Ÿง‚
โœ… (Optional) Red pepper flakes, sesame seeds, or microgreens for garnish

Instructions

  1. Toast the Bread

    • Toast the whole-grain bread to your desired crispiness.

  2. Prepare the Avocado Spread

    • In a small bowl, mash ½ avocado with a fork.

    • Season with a pinch of salt and black pepper.

    • (Optional) Add a squeeze of lemon juice to keep it fresh and add brightness.

  3. Cook the Egg

    • Fried Egg: Heat a non-stick skillet over medium heat, lightly grease with oil or butter, and fry the egg until the whites are set but the yolk is still runny.

    • Poached Egg: Bring a pot of water to a gentle simmer, add a teaspoon of vinegar, and poach the egg for 3-4 minutes until the whites are set.

  4. Assemble the Toast

    • Spread the mashed avocado evenly over the toasted bread.

    • Place the cooked egg on top.

    • Drizzle with Sriracha sauce and sprinkle with extra salt & pepper if desired.

  5. Garnish & Serve

    • Add red pepper flakes, sesame seeds, or microgreens for extra flavor and texture.
