
๐ Lemon Dill Salmon & Roasted Veggies Bowl ๐๐ฅฆ
This light and flavorful meal combines zesty grilled salmon, vibrant veggies, and a refreshing yogurt sauce. Perfect for a healthy lunch or dinner!
๐ Ingredients
For the Salmon:

2 salmon fillets (skin-on or skinless)

Juice of 1 lemon ๐

1 tsp lemon zest
-
2 cloves garlic, minced
-
1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tbsp olive oil
-
Salt & black pepper to taste
For the Roasted Veggies:

1 cup cherry tomatoes ๐
-
1 bunch asparagus, trimmed
-
1 tbsp olive oil
-
Salt & pepper to taste
Other Components:
-
1 cup snap peas, steamed ๐ฑ
-
2 soft-boiled eggs ๐ฅ
-
Optional: cooked quinoa or brown rice as a base
Greek Yogurt Cucumber Sauce:
-
1/2 cup Greek yogurt
-
1/4 cucumber, grated or finely chopped
-
1 tbsp lemon juice
-
1 tsp dill
-
Salt & pepper to taste

1๏ธโฃ Prepare the Salmon:
-
In a bowl, mix olive oil, lemon juice, zest, garlic, dill, salt, and pepper.

Rub the marinade onto the salmon fillets and let sit for at least 15 minutes.

Grill or pan-sear the salmon over medium heat for 4–5 minutes per side, or until cooked through and golden.
2๏ธโฃ Roast the Veggies:

Preheat the oven to 200°C (390°F).
-
Toss asparagus and cherry tomatoes with olive oil, salt, and pepper.
-
Spread them on a baking tray and roast for 15–20 minutes, until tender and slightly caramelized.
3๏ธโฃ Steam the Snap Peas:

Steam the snap peas for 2–3 minutes until tender-crisp. Set aside.
4๏ธโฃ Make the Yogurt Sauce:
-
In a small bowl, mix Greek yogurt, cucumber, lemon juice, dill, salt, and pepper. Chill until ready to use.
5๏ธโฃ Boil the Eggs:

Place eggs in boiling water and cook for 6–7 minutes. Cool under cold water and peel gently.
6๏ธโฃ Assemble the Bowl:

Start with a base of quinoa, rice, or serve as-is.

Add grilled salmon, roasted asparagus and tomatoes, steamed snap peas, and halved soft-boiled eggs.

Drizzle the yogurt cucumber sauce over the top.
