๐Ÿ‹ Lemon Dill Salmon & Roasted Veggies Bowl ๐ŸŸ๐Ÿฅฆ

 

This light and flavorful meal combines zesty grilled salmon, vibrant veggies, and a refreshing yogurt sauce. Perfect for a healthy lunch or dinner!


๐Ÿ“ Ingredients

For the Salmon:

  • 2 salmon fillets (skin-on or skinless)

  • Juice of 1 lemon ๐Ÿ‹

  • 1 tsp lemon zest

  • 2 cloves garlic, minced

  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)

  • 1 tbsp olive oil

  • Salt & black pepper to taste

For the Roasted Veggies:

  • 1 cup cherry tomatoes ๐Ÿ…

  • 1 bunch asparagus, trimmed

  • 1 tbsp olive oil

  • Salt & pepper to taste

Other Components:

  • 1 cup snap peas, steamed ๐ŸŒฑ

  • 2 soft-boiled eggs ๐Ÿฅš

  • Optional: cooked quinoa or brown rice as a base

Greek Yogurt Cucumber Sauce:

  • 1/2 cup Greek yogurt

  • 1/4 cucumber, grated or finely chopped

  • 1 tbsp lemon juice

  • 1 tsp dill

  • Salt & pepper to taste


๐Ÿ‘ฉ‍๐Ÿณ Instructions

1๏ธโƒฃ Prepare the Salmon:

  • In a bowl, mix olive oil, lemon juice, zest, garlic, dill, salt, and pepper.

  • Rub the marinade onto the salmon fillets and let sit for at least 15 minutes.

  • Grill or pan-sear the salmon over medium heat for 4–5 minutes per side, or until cooked through and golden.

2๏ธโƒฃ Roast the Veggies:

  • Preheat the oven to 200°C (390°F).

  • Toss asparagus and cherry tomatoes with olive oil, salt, and pepper.

  • Spread them on a baking tray and roast for 15–20 minutes, until tender and slightly caramelized.

3๏ธโƒฃ Steam the Snap Peas:

  • Steam the snap peas for 2–3 minutes until tender-crisp. Set aside.

4๏ธโƒฃ Make the Yogurt Sauce:

  • In a small bowl, mix Greek yogurt, cucumber, lemon juice, dill, salt, and pepper. Chill until ready to use.

5๏ธโƒฃ Boil the Eggs:

  • Place eggs in boiling water and cook for 6–7 minutes. Cool under cold water and peel gently.

6๏ธโƒฃ Assemble the Bowl:

  • Start with a base of quinoa, rice, or serve as-is.

  • Add grilled salmon, roasted asparagus and tomatoes, steamed snap peas, and halved soft-boiled eggs.

  • Drizzle the yogurt cucumber sauce over the top.
