
Spinach and Cheese Empanadas ๐ฅ๐ง๐ฟ

Ingredients:

1 pack of empanada pastry discs

2 tablespoons cooking cream
-
1 bag of fresh spinach
-
3 slices of soft cheese

½ finely chopped onion
-
Olive oil
-
Salt

1 egg
Instructions:

Prepare the filling: Heat a drizzle of olive oil in a pan over medium heat. Add the finely chopped onion with a pinch of salt and sauté until translucent. Then, add the fresh spinach and cook until wilted.

Add cheese and cream: Once the spinach is cooked, add the sliced cheese and stir until melted. Pour in the cooking cream, mix well, and adjust the salt if needed. Remove from heat.

Fill the empanadas: Place a small amount of the spinach and cheese mixture onto each pastry disc. Be careful not to overfill, as it may break when sealing. Fold the empanada in half and press the edges with a fork to seal them.

Bake the empanadas: Preheat the oven to 180°C (350°F) with heat from above and below. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with beaten egg for a golden finish.

Bake and serve: Bake until golden brown, then remove from the oven and serve warm. Enjoy these delicious and cheesy spinach empanadas! ๐
