🧾 Ingredients (Serves 4–6)

For the Beef

  • 500 g beef tenderloin or filet steak

  • Black pepper, to taste

  • 1 tablespoon olive oil


For the Mushroom Filling (Duxelles)

  • 250 g mushrooms, finely chopped

  • 1 small shallot or onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon butter

  • Salt and black pepper, to taste

  • 1 teaspoon fresh thyme (optional)


For Assembly

  • 1 sheet puff pastry, thawed

  • 1 egg, beaten (for egg wash)


Optional Topping

  • Garlic butter or Dijon mustard butter

  • Fresh thyme or parsley, for garnish


👨‍🍳 Instructions

Step 1: Prepare the Beef

Season the beef generously with salt and black pepper.
Heat olive oil in a skillet over high heat.
Sear the beef on all sides for 1–2 minutes until browned.
Remove from heat and let cool completely.
Cut into evenly sized portions.


Step 2: Make the Mushroom Filling

In the same skillet, melt butter over medium heat.
Add onion and cook until softened.
Add garlic and mushrooms, cooking until all moisture evaporates and the mixture is thick and paste-like.
Season with salt, pepper, and thyme.
Let cool completely.


Step 3: Assemble the Wellington Bites

Preheat oven to 200°C / 400°F.
Roll out puff pastry and cut into squares large enough to wrap each beef piece.
Place a spoonful of mushroom filling on the pastry, top with beef, and wrap tightly.
Seal edges underneath.


Step 4: Egg Wash

Place wrapped bites seam-side down on a baking tray lined with parchment paper.
Brush tops with beaten egg for a golden finish.


Step 5: Bake

Bake for 25–30 minutes, until puff pastry is golden brown and crisp.


Step 6: Finish & Serve

Remove from oven and rest for 5 minutes.
Top with a small dollop of garlic butter or sauce if desired.
Garnish with fresh herbs and serve warm.
