For the Chicken

400 g chicken breast or thigh, cut into bite-sized pieces

1 tablespoon olive oil

1 teaspoon cornstarch

Salt, to taste

For the Stir-Fry

1 red bell pepper, diced
-
2 cloves garlic, minced

1 tablespoon olive oil
-
1 tablespoon soy sauce
-
1 tablespoon oyster sauce (optional)

1 teaspoon honey or sugar

1 tablespoon water or chicken stock
Garnish

Fresh basil or parsley, chopped

Cracked black pepper (optional)
👨🍳 Instructions

Step 1: Prepare the Chicken
In a bowl, toss chicken pieces with cornstarch, salt, and black pepper until lightly coated.
Step 2: Cook the Chicken
Heat olive oil in a skillet or wok over medium-high heat.
Add chicken and cook for 4–5 minutes, stirring occasionally, until golden and cooked through.
Remove from the pan and set aside.
Step 3: Sauté Aromatics & Peppers
In the same pan, add olive oil if needed.
Add garlic and sauté for 20–30 seconds until fragrant.
Add diced bell pepper and stir-fry for 2–3 minutes until slightly tender but still crisp.
Step 4: Make the Sauce
Return the chicken to the pan.
Add soy sauce, oyster sauce, honey, and water (or stock).
Stir well and cook for 1–2 minutes until the sauce thickens and coats the chicken evenly.
Step 5: Finish & Serve
Remove from heat.
Sprinkle with fresh herbs and extra black pepper if desired.
Serve immediately.
