Toppings

1/2 cup black beans, drained and rinsed

1/2 cup corn kernels (fresh or canned)

1 cup cherry tomatoes, halved

1 ripe avocado, diced

1/2 cup shredded cheddar or Mexican-blend cheese

1/3 cup sour cream or Greek yogurt

Fresh cilantro, chopped

👨🍳 Instructions

Step 1: Cook the Ground Beef
Heat olive oil in a skillet over medium heat.
Add onion and sauté for 2–3 minutes until soft.
Add garlic and cook for 20–30 seconds until fragrant.
Add ground beef and cook, breaking it up, until browned.
Stir in chili powder, cumin, paprika, salt, and black pepper.
Add tomato sauce and cook for another 3–4 minutes until well combined and slightly saucy.
Remove from heat.
Step 2: Prepare the Rice
Warm the cooked rice and season lightly with salt.
Mix in chopped cilantro if using.
Step 3: Prepare the Toppings
Warm the black beans and corn briefly in a pan or microwave.
Dice avocado and halve tomatoes just before assembling.
Step 4: Assemble the Bowl
Divide rice among serving bowls.
Arrange ground beef, black beans, corn, tomatoes, avocado, and cheese in sections over the rice.
Add a generous spoon of sour cream in the center.
Step 5: Serve
Garnish with fresh cilantro.
Serve with lime wedges on the side.
Mix everything together before eating or enjoy each topping separately.
