For the Skillet Base

500 g ground beef

4 medium potatoes, peeled and cut into bite-sized cubes

1 small onion, finely chopped

1 red bell pepper, diced

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon ground cumin (optional)

Step 1: Cook the Potatoes
Heat 1 tablespoon olive oil in a large skillet over medium heat.
Add the potato cubes, season with salt and pepper, and cook for 10–12 minutes, stirring occasionally, until golden brown and tender.
Remove potatoes from the skillet and set aside.
Step 2: Cook the Ground Beef
In the same skillet, add the remaining olive oil.
Add onion and sauté for 2–3 minutes until softened.
Add garlic and cook for 20–30 seconds until fragrant.
Add ground beef and cook until browned, breaking it up with a spoon.
Season with paprika, cumin (if using), salt, and black pepper.
Step 3: Add Vegetables
Add diced red bell pepper to the beef mixture.
Cook for 3–4 minutes until slightly softened.
Return the cooked potatoes to the skillet and mix well.
Cook together for another 3–5 minutes so flavors combine.
Step 4: Cook the Eggs
Make small wells in the mixture and crack eggs directly into the skillet.
Cover the pan and cook on low heat for 5–7 minutes, until egg whites are set but yolks remain runny (or longer if preferred).
Step 5: Serve
Remove from heat and sprinkle with fresh parsley.
Season eggs lightly with salt and pepper.
Serve hot straight from the skillet.
