For the yogurt mixture:

1 cup vanilla yogurt

2 tablespoons honey or sugar (adjust to taste)

1/2 teaspoon vanilla extract

For the blueberry mixture:
-
1 cup fresh or frozen blueberries
-
2 tablespoons fresh lemon juice
-
2 tablespoons honey or sugar (adjust to taste)
π₯ Instructions:

Prepare the yogurt mixture:
In a bowl, mix the vanilla yogurt, honey (or sugar), and vanilla extract until smooth and well combined. Set aside. -
Prepare the blueberry mixture:
In a blender or food processor, combine the blueberries, lemon juice, and honey (or sugar). Blend until smooth. You can leave it slightly chunky if you prefer little pieces of fruit in your popsicles. -
Layer the popsicles:
In popsicle molds, alternate spoonfuls of the yogurt mixture and blueberry mixture to create a swirled or layered effect. You can lightly stir with a stick or knife to create a marble pattern if you like. -
Insert sticks:
Place the popsicle sticks into the molds. -
Freeze:
Freeze for at least 4–6 hours, or until completely solid. -
Unmold and enjoy:
To easily release the popsicles, run the molds under warm water for a few seconds. Then pull out your beautiful blueberry and vanilla treats!

You can also add a handful of whole blueberries into the molds for extra texture.

For a dairy-free version, use a plant-based vanilla yogurt (like coconut or almond yogurt).
