Japanese Matcha Tiramisu


Ingredients:

  • 8 ounces mascarpone cheese

  • 1 cup heavy cream

  • 1/2 cup sugar

  • 1 tablespoon matcha powder (plus extra for dusting)

  • 1 cup brewed green tea (cooled, sweetened to taste)

  • 1 teaspoon vanilla extract

  • 1 package ladyfingers (savoiardi)

Instructions:

  1. Prepare the Matcha Cream Mixture:

    • In a small bowl, sift the matcha powder to ensure there are no lumps.

    • In a large mixing bowl, combine the mascarpone cheese, heavy cream, sugar, and vanilla extract.

    • Using a hand mixer or stand mixer, whip the mixture until it becomes thick and smooth—this should take about 3-5 minutes on medium-high speed.

  2. Incorporate the Matcha:

    • Gradually add the sifted matcha powder to the whipped mascarpone mixture. Mix it in gently until the matcha is fully incorporated and the mixture is evenly green.

  3. Prepare the Green Tea Soak:

    • Brew your green tea and let it cool. If you prefer a sweeter flavor, you can sweeten the tea with sugar or honey, to taste.

  4. Assemble the Tiramisu:

    • Quickly dip the ladyfingers into the cooled green tea, making sure they don't get too soggy. Lay them out in the bottom of your serving dish (a 9x9-inch dish works well).

    • Spread half of the matcha mascarpone mixture over the ladyfingers, smoothing it out into an even layer.

    • Repeat the process with another layer of dipped ladyfingers and top with the remaining matcha mascarpone mixture.

  5. Chill and Set:

    • Cover the tiramisu and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.

  6. Serve:

    • Before serving, dust the top with a little extra matcha powder for a beautiful finish.
