Ingredients:
  • 18-24 large strawberries
  • 1 cup heavy whipping cream
  • 1 (8 ounce) package of cream cheese (softened)
  • 1/3 cup sour cream
  • 2/3 cup white granulated sugar
  • Optional garnish: crushed graham crackers, mini chocolate chips, or fresh mint leaves
Directions:
  • Prep the Strawberries:
  • Wash and dry the strawberries thoroughly. Slice each strawberry in half lengthwise. Use a small spoon or melon baller to gently scoop out a small cavity in the center of each half to make room for the filling. Set aside on a tray.
  • Make the Whipped Cream:
  • In a mixing bowl, beat the heavy whipping cream until stiff peaks form. Set aside.
  • Prepare the Cheesecake Filling:
  • In another bowl, beat the softened cream cheese, sour cream, and sugar together until smooth and creamy.
Fold Together:
  • Gently fold the whipped cream into the cream cheese mixture until fully combined and light in texture.
  • Fill the Strawberries:
  • Transfer the cheesecake filling to a piping bag (or a zip-top bag with the corner snipped off). Pipe the filling generously into the hollowed-out strawberries.
  • Garnish (Optional):
  • Sprinkle the tops with crushed graham crackers for a classic cheesecake finish, or add mini chocolate chips or mint for flair.
Chill & Serve:
Refrigerate the strawberries for at least 30 minutes before serving. Serve chilled on a platter and watch them disappear!
