Heavenly Pineapple & White Chocolate Cake ๐Ÿ๐Ÿซโœจ


A tropical delight layered with fruit, cream, and indulgent white chocolate glaze.


๐Ÿ“ Ingredients

For the Cake:

  • 2 1/2 cups all-purpose flour

  • 2 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 1/4 cups unsalted butter, softened

  • 2 cups granulated sugar

  • 4 large eggs, at room temperature

  • 1 teaspoon vanilla extract

  • 1 cup crushed pineapple, well-drained

  • 1 cup whole milk

  • 1 cup white chocolate chips

For the Whipped Frosting:

  • 1 cup heavy cream

  • 1/4 cup powdered sugar

  • 1 teaspoon vanilla extract

For the White Chocolate Glaze & Garnish:

  • 1 1/2 cups white chocolate, melted (for pouring or drizzling)

  • 1/2 cup shredded coconut (optional)

  • White chocolate shavings or curls (optional for topping)


๐Ÿ‘ฉ‍๐Ÿณ Instructions

1. Prep and Preheat

  • Preheat oven to 350°F (175°C).

  • Grease and flour two 9-inch round cake pans, or line with parchment paper.

2. Mix Dry Ingredients

  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. Cream Butter & Sugar

  • In a large mixing bowl, beat the butter and granulated sugar until light and fluffy (about 3–4 minutes).

4. Add Eggs & Vanilla

  • Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.

  • Mix in the vanilla extract.

5. Combine Wet and Dry

  • Alternately add the dry flour mixture and the milk to the butter mixture, beginning and ending with flour. Mix just until combined.

6. Add Pineapple & Chocolate

  • Fold in the drained crushed pineapple and white chocolate chips.

7. Bake

  • Divide the batter evenly between the prepared pans.

  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

  • Let cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.


๐Ÿฐ Make the Whipped Frosting

  1. In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  2. Chill until ready to use.


๐Ÿซ Glaze & Assemble the Cake

  1. Once cakes are cooled, place one layer on a serving plate.

  2. Spread a thick layer of whipped cream frosting on top.

  3. Place the second cake layer on top and frost the entire cake with the remaining whipped cream.


โœจ Add the White Chocolate Glaze

  1. Gently melt 1 1/2 cups white chocolate in a microwave or double boiler until smooth.

  2. Drizzle or pour the melted white chocolate over the top of the cake, letting it drip slightly down the sides.

  • Sprinkle with shredded coconut around the sides or top (optional).

  • Add white chocolate shavings or curls for a beautiful finish.

  • Chill slightly to set the glaze, then slice and enjoy!

  • For more texture, lightly toast the coconut before adding it.

  • You can also add a bit of pineapple juice to the whipped frosting for extra flavor.
