Ingredients
For the cake:

3/4 cup (95g) all-purpose flour
1/4 cup (30g) unsweetened cocoa powder
1 tsp baking powder
1/4 tsp salt
4 large eggs
3/4 cup (150g) granulated sugar
1 tsp vanilla extract
1/4 cup (60ml) milk
Powdered sugar, for dusting (to prevent sticking)
For the filling:

1 cup (240ml) heavy whipping cream
1/4 cup (30g) powdered sugar
1/2 tsp vanilla extract
Optional: 4 oz (115g) cream cheese, softened (for a richer filling)
Optional Chocolate Ganache Topping:
1/2 cup (120ml) heavy cream
4 oz (115g) semi-sweet or dark chocolate, chopped

๐Ÿง Instructions
1. Prepare the pan & oven
Preheat oven to 350°F (175°C).
Line a 10x15 inch jelly roll pan with parchment paper. Lightly grease the paper.
2. Make the cake
In a bowl, sift together flour, cocoa powder, baking powder, and salt.
In a separate large bowl, beat eggs with sugar and vanilla on high speed for 5-6 minutes until pale and thick.
Gently fold in the dry ingredients.
Add milk and mix just until combined.
Spread batter evenly into the prepared pan.
Bake for 10–12 minutes, or until the cake springs back when lightly touched.
3. Roll the cake
While the cake is still hot, dust a clean kitchen towel with powdered sugar.
Invert the cake onto the towel, peel off the parchment, and gently roll the cake up (with the towel inside).
Let it cool completely rolled up — this helps it keep its shape.
4. Make the filling
Beat heavy cream, powdered sugar, and vanilla (and cream cheese, if using) until stiff peaks form.
5. Assemble
Carefully unroll the cooled cake.
Spread the filling evenly over the surface.
Re-roll the cake without the towel. Chill for at least 30 minutes.
6. Ganache (optional)
Heat cream until just simmering. Pour over chocolate and let sit 2 minutes.


Stir until smooth. Let cool slightly, then pour over the chilled cake roll.
