Treat yourself to a dreamy, no-bake dessert that layers creamy vanilla mousse with rich chocolate cookie crust and delightful cookie dough. Perfect for satisfying your sweet tooth!
Ingredients:
- 1 ½ cups chocolate cookie crumbs (like Oreos, without filling)
- 5 tbsp unsalted butter, melted
- ½ cup unsalted butter, softened
- โ
cup powdered sugar
- 1 cup all-purpose flour (heat-treated)*
- 2–3 tbsp milk
- 1 ½ cups heavy whipping cream
- 8 oz cream cheese, softened
- 1 tsp vanilla extract
- ¼ cup brown sugar
- ¼ cup granulated sugar
- โ
cup mini chocolate chips
- ½ cup chocolate chips (or mini chips for easier slicing)
- Optional: Crushed cookies or a dusting of cocoa powder
Instructions:
1. Start by preparing the crust. In a bowl, combine the chocolate cookie crumbs with the melted butter, mixing until well incorporated. Firmly press this mixture into the bottom of a greased 9-inch springform pan. Place it in the refrigerator to chill for about 15 minutes.
2. While the crust is chilling, make the vanilla mousse layer. In a mixing bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined. Spread half of this mousse over the chilled cookie crust and return to the refrigerator.
3. Now, prepare the cookie dough layer. In another mixing bowl, cream together the softened butter, brown sugar, granulated sugar, and vanilla extract until light and fluffy. Gradually add in the heat-treated flour and enough milk to create a soft, manageable dough. Fold in the mini chocolate chips. Press or spread this cookie dough layer evenly over the first mousse layer in the springform pan.
4. After adding the cookie dough layer, spread the remaining vanilla mousse on top. Smooth the surface with a spatula. Cover the cake and chill it in the refrigerator for at least 4 hours, or ideally overnight, until it is fully set.
5. For decoration, once the mousse cake is set, sprinkle the top with chocolate chips and, if desired, add crushed cookies or a dusting of cocoa powder. Slice into portions and serve chilled. Enjoy!
