Crockpot Corned Beef and Cabbage 🥩🥬🥕🥔

📝 Ingredients (Serves 4)

  • 1 pound beef stew meat, cut into bite-sized pieces

  • 1 large onion, thinly sliced

  • 2 tablespoons olive oil

  • 2 cups beef broth

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon garlic powder

  • Salt and black pepper, to taste

  • 8 ounces egg noodles

  • 1 cup shredded Swiss cheese (or Gruyère for a more classic French flavor)

1. Sear the Beef

  • In a large skillet or pot, heat 1 tablespoon olive oil over medium-high heat.

  • Add the beef, season with salt and pepper, and sear until browned on all sides (about 5–7 minutes). Remove beef and set aside.

2. Caramelize the Onions

  • Add another tablespoon of olive oil to the same pan.

  • Add the sliced onions and cook over medium-low heat, stirring frequently, for 15–20 minutes until deeply golden and caramelized.

3. Combine and Simmer

  • Return the beef to the pan with the onions.

  • Add beef broth, Worcestershire sauce, and garlic powder.

  • Bring to a gentle simmer. Cover and cook for 20–25 minutes, or until the beef is tender.

4. Cook the Noodles

  • While the beef simmers, cook egg noodles according to package instructions. Drain and set aside.

5. Bring It All Together

  • Add the cooked egg noodles to the beef and onion mixture.

  • Stir in shredded Swiss cheese until melted and creamy. Adjust salt and pepper to taste.

6. Serve Warm

  • Serve immediately, optionally garnished with parsley or extra cheese.

  • Add a splash of dry white wine when caramelizing the onions for extra depth.
