2 strip steaks or sirloin steaks (about 1–1.25 inch thick)
1 tablespoon olive oil
Salt and freshly ground black pepper
For the shallot sauce
2 tablespoons butter
2 large shallots, thinly sliced
½ cup beef broth
1 teaspoon Dijon mustard
½ teaspoon black pepper
1 teaspoon fresh thyme
Step-by-step cooking
Step 1 – Bring the steak to room temperature
Remove the steaks from the refrigerator about 20 minutes before cooking so they cook evenly.

Let the sauce reduce slightly until it becomes glossy and lightly thickened.
