120 g dark chocolate
100 g unsalted butter
2 eggs
2 egg yolks
80 g sugar
40 g flour
½ teaspoon vanilla extract
Pinch of salt

8 soft caramel candies
2 tablespoons heavy cream
Step-by-step cooking
Step 1 – Prepare the ramekins
Preheat the oven to 425°F (220°C). Grease four ramekins with butter and lightly dust with cocoa powder.
Step 2 – Melt chocolate and butter
In a heatproof bowl, melt dark chocolate and butter together using a double boiler or microwave. Stir until smooth.
Step 3 – Whisk eggs and sugar
In a separate bowl, whisk eggs, egg yolks, and sugar until the mixture becomes pale and slightly thick.
Step 4 – Combine the batter
Slowly mix the melted chocolate mixture into the eggs. Add vanilla extract, flour, and salt. Stir gently until smooth.
Step 5 – Prepare the caramel filling
Melt caramel candies with heavy cream in a small saucepan until smooth.
Step 6 – Fill the ramekins
Pour chocolate batter into each ramekin about halfway. Add a spoonful of caramel sauce in the center.

Add more chocolate batter on top so the caramel is fully covered.
Step 8 – Bake briefly
Bake for about 10–12 minutes until the edges are set while the center remains soft.
Step 9 – Rest before serving
Allow the cakes to rest for about 1 minute after removing them from the oven.

Invert the cakes onto plates and serve immediately so the caramel center flows when cut.
