Ingredients (Serves 2)

2 New York strip steaks (about 1–1.25 inch thick)
1 tablespoon olive oil
Salt and freshly ground black pepper

For the herb crust

2 tablespoons softened butter
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 teaspoon fresh thyme leaves
½ teaspoon black pepper
½ teaspoon lemon zest


Step-by-step cooking

Step 1 – Prepare the herb mixture
In a small bowl, combine softened butter, minced garlic, parsley, thyme, black pepper, and lemon zest. Mix until evenly combined.


Step 2 – Bring the steak to room temperature
Remove the steaks from the refrigerator about 20 minutes before cooking.


Step 3 – Season the steak
Pat the steaks dry with paper towels and season both sides generously with salt and black pepper.

Step 4 – Heat the skillet
Place a heavy skillet or cast iron pan over medium-high heat and add olive oil. Allow the oil to heat until shimmering.

Place the steaks in the skillet and cook without moving them for about 3–4 minutes until a golden crust forms.


Step 6 – Flip and cook the other side
Turn the steaks and cook the second side for another 3–4 minutes depending on desired doneness.


Step 7 – Rest the steak
Transfer the steaks to a plate and allow them to rest for about 5 minutes.


Step 8 – Add the herb crust
Spread the garlic herb butter mixture over the top of the hot steaks.

Allow the butter to melt slowly, forming a light herb crust over the surface.


Step 10 – Slice and serve
