Ingredients (Serves 2)
2 ribeye or strip steaks (about 1–1.25 inch thick)
1 tablespoon olive oil
Salt and freshly ground black pepper
For the garlic thyme butter
3 tablespoons butter
3 cloves garlic, crushed
2 sprigs fresh thyme
Step-by-step cooking
Step 1 – Bring the steak to room temperature
Remove the steaks from the refrigerator about 20 minutes before cooking so they cook evenly.
Step 2 – Season the steak
Pat the steaks dry with paper towels and season both sides generously with salt and freshly ground black pepper.
Step 3 – Heat the skillet
Place a heavy skillet or cast iron pan over medium-high heat and add olive oil. Allow the oil to heat until shimmering.

Transfer the steaks to a plate and allow them to rest for about 5 minutes.

Slice the steak against the grain and spoon the remaining butter from the pan over the slices.
