1 tablespoon sugar
-
½ teaspoon ground cinnamon (optional)
-
2 tablespoons butter
For the Cream Cheese Filling
-
7 oz (200 g) cream cheese, softened
-
3 tablespoons powdered sugar
-
1 teaspoon vanilla extract
-
2 tablespoons heavy cream or whipping cream
For the Blueberry Sauce

2 tablespoons water
-
1 teaspoon cornstarch (optional, for thickening)
For Garnish

Fresh blueberries
-
Powdered sugar
-
Maple syrup or honey
-
Fresh mint leaves
Instructions

1. Prepare the Cream Cheese Filling
-
In a bowl, combine cream cheese, powdered sugar, and vanilla extract.
-
Beat until smooth and creamy.
-
Add the heavy cream and mix until light and fluffy.
-
Chill in the refrigerator for 10 minutes so it firms slightly.
2. Make the Blueberry Sauce
-
Add blueberries, sugar, water, and lemon juice to a small saucepan.
-
Cook over medium heat for 5–7 minutes until the berries soften and release juices.
-
If you prefer a thicker sauce, mix cornstarch with 1 tablespoon water and stir it into the sauce.
-
Simmer for 1–2 minutes until thickened. Set aside.
3. Prepare the Egg Mixture
In a shallow bowl whisk together:
-
eggs
-
milk
-
sugar
-
vanilla extract
-
cinnamon (optional)
Mix until well combined.
4. Assemble the Stuffed Toast
-
Spread a thick layer of cream cheese filling onto one slice of bread.
-
Add a spoonful of blueberry sauce or fresh blueberries.
-
Top with another slice of bread to form a sandwich.
5. Dip the Bread
-
Dip the stuffed sandwich into the egg mixture.
-
Let it soak for about 5–10 seconds per side so the bread absorbs the mixture.
6. Cook the French Toast
-
Heat a skillet over medium heat and melt the butter.
-
Place the stuffed bread in the skillet.
-
Cook for 3–4 minutes per side until golden brown and crispy.
Serving
Cut the toast in half and serve with:
-
warm blueberry sauce
-
a dusting of powdered sugar
-
fresh blueberries
-
maple syrup or honey
-
mint leaves for garnish
