Blueberry Cream Stuffed French Toast

Ingredients

For the French Toast

  • 6 thick slices brioche or sandwich bread

  • 3 large eggs

  • ½ cup (120 ml) milk

  • 1 teaspoon vanilla extract

  • 1 tablespoon sugar

  • ½ teaspoon ground cinnamon (optional)

  • 2 tablespoons butter

For the Cream Cheese Filling

  • 7 oz (200 g) cream cheese, softened

  • 3 tablespoons powdered sugar

  • 1 teaspoon vanilla extract

  • 2 tablespoons heavy cream or whipping cream

For the Blueberry Sauce

  • 1 cup (150 g) fresh or frozen blueberries

  • 2 tablespoons sugar

  • 1 tablespoon lemon juice

  • 2 tablespoons water

  • 1 teaspoon cornstarch (optional, for thickening)

For Garnish

  • Fresh blueberries

  • Powdered sugar

  • Maple syrup or honey

  • Fresh mint leaves


Instructions

1. Prepare the Cream Cheese Filling

  1. In a bowl, combine cream cheese, powdered sugar, and vanilla extract.

  2. Beat until smooth and creamy.

  3. Add the heavy cream and mix until light and fluffy.

  4. Chill in the refrigerator for 10 minutes so it firms slightly.


2. Make the Blueberry Sauce

  1. Add blueberries, sugar, water, and lemon juice to a small saucepan.

  2. Cook over medium heat for 5–7 minutes until the berries soften and release juices.

  3. If you prefer a thicker sauce, mix cornstarch with 1 tablespoon water and stir it into the sauce.

  4. Simmer for 1–2 minutes until thickened. Set aside.


3. Prepare the Egg Mixture

In a shallow bowl whisk together:

  • eggs

  • milk

  • sugar

  • vanilla extract

  • cinnamon (optional)

Mix until well combined.


4. Assemble the Stuffed Toast

  1. Spread a thick layer of cream cheese filling onto one slice of bread.

  2. Add a spoonful of blueberry sauce or fresh blueberries.

  3. Top with another slice of bread to form a sandwich.


5. Dip the Bread

  1. Dip the stuffed sandwich into the egg mixture.

  2. Let it soak for about 5–10 seconds per side so the bread absorbs the mixture.


6. Cook the French Toast

  1. Heat a skillet over medium heat and melt the butter.

  2. Place the stuffed bread in the skillet.

  3. Cook for 3–4 minutes per side until golden brown and crispy.


Serving

Cut the toast in half and serve with:

  • warm blueberry sauce

  • a dusting of powdered sugar

  • fresh blueberries

  • maple syrup or honey

  • mint leaves for garnish


Tips for the Best French Toast

Brioche or challah bread works best because it’s soft and rich.
✔ Add lemon zest to the cream filling for extra flavor.
✔ For a richer filling, mix mascarpone with cream cheese.
