Ingredients (Serves 2–3)
2 large chicken breasts, sliced into cutlets
1 tablespoon olive oil
Salt and freshly ground black pepper
For the spinach cream sauce
2 tablespoons butter
3 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
1 cup fresh spinach
½ cup grated parmesan cheese
½ teaspoon black pepper
Fresh parsley, chopped
Step-by-step cooking
Step 1 – Prepare the chicken
Pat the chicken cutlets dry with paper towels and season both sides with salt and freshly ground black pepper.
Step 2 – Heat the skillet
Place a large skillet over medium heat and add olive oil. Allow the oil to heat until shimmering.
Step 3 – Sear the chicken
Add the chicken to the skillet and cook for about 4–5 minutes until a golden crust forms.
