Chocolate Peanut Butter Lava Cupcakes

Ingredients
For the Chocolate Cupcakes

1 cup (125 g) all-purpose flour

1/2 cup (50 g) unsweetened cocoa powder

1 tsp baking powder
-
1/2 tsp baking soda
-
1/4 tsp salt
-
3/4 cup (150 g) granulated sugar
-
1/2 cup (120 ml) vegetable oil
-
2 large eggs
-
1 tsp vanilla extract
-
1/2 cup (120 ml) buttermilk
-
1/2 cup (120 ml) hot coffee or hot water
For the Peanut Butter Lava Filling
-
3/4 cup (190 g) creamy peanut butter
-
1/3 cup (80 ml) heavy cream
-
1/4 cup (50 g) brown sugar
-
1 tbsp butter
-
1/2 tsp vanilla extract
-
pinch of salt
For the Peanut Butter Frosting
-
1/2 cup (115 g) unsalted butter, softened
-
3/4 cup (190 g) creamy peanut butter
-
2 cups (240 g) powdered sugar
-
2–3 tbsp heavy cream
-
1 tsp vanilla extract
For Garnish
-
Chocolate sauce or melted chocolate
-
Mini peanut butter cups (optional)
-
Chocolate shavings or chopped peanuts
Instructions

1. Prepare the Cupcakes
-
Preheat oven to 350°F (175°C).
-
Line a 12-cup muffin tin with cupcake liners.
-
In a bowl whisk together:
-
flour
-
cocoa powder
-
baking powder
-
baking soda
-
salt
-
In another bowl mix:
-
sugar
-
oil
-
eggs
-
vanilla
Whisk until smooth.
-
Add buttermilk and mix well.
-
Gradually fold in the dry ingredients.
-
Slowly pour in the hot coffee or hot water and mix until the batter is smooth.
-
Fill cupcake liners about 2/3 full.
-
Bake for 18–20 minutes.
-
Let cupcakes cool completely.
2. Make the Peanut Butter Lava Filling
-
In a saucepan combine:
-
peanut butter
-
heavy cream
-
brown sugar
-
butter
-
Heat over low heat, stirring until smooth and creamy.
-
Add vanilla and salt.
-
Let the sauce cool slightly until thick but still pourable.
3. Fill the Cupcakes
-
Use a knife or cupcake corer to remove the center of each cupcake.
-
Spoon 1–2 tablespoons of peanut butter lava filling into the hole.
4. Make the Peanut Butter Frosting
-
Beat butter and peanut butter until smooth and fluffy.
-
Gradually add powdered sugar.
-
Add vanilla and heavy cream.
-
Beat for 3–4 minutes until light and creamy.
5. Decorate the Cupcakes
-
Pipe the peanut butter frosting on top of each cupcake.
-
Drizzle with chocolate sauce.
-
Top with:
-
mini peanut butter cups
-
chocolate chunks
-
crushed peanuts
Serving Tip
For the best effect like in the photo:
Warm the cupcake in the microwave for 8–10 seconds before serving so the peanut butter lava center flows out. 🍫
