Ingredients
For the Steak

2 ribeye or sirloin steaks (about 250–300 g / 8–10 oz each)

1 tbsp olive oil
-
1 tbsp butter
-
3 garlic cloves, crushed
-
1 tsp coarse salt
-
1 tsp freshly ground black pepper
-
1 sprig fresh thyme or rosemary
For the Roasted Potatoes
-
500 g (1 lb) baby potatoes, halved
-
2 tbsp olive oil
-
1/2 tsp garlic powder
-
1/2 tsp paprika
-
1/2 tsp salt
-
1/4 tsp black pepper
-
1 tbsp chopped parsley (for garnish)
For the Creamy Peppercorn Sauce
-
1 tbsp butter
-
1 small shallot or 1/2 onion, finely chopped
-
1 tbsp crushed black peppercorns
-
1/2 cup beef broth
-
1/2 cup heavy cream
-
1 tsp Dijon mustard
-
1 tbsp Worcestershire sauce
-
Salt to taste
Instructions

1. Roast the Potatoes
-
Preheat oven to 200°C (400°F).

In a bowl, toss potatoes with:

olive oil
-
garlic powder
-
paprika
-
salt
-
black pepper
-
-
Spread on a baking tray.
-
Roast for 25–30 minutes, turning halfway until golden and crispy.
2. Prepare the Steak
-
Remove steaks from refrigerator 20 minutes before cooking.
-
Pat dry with paper towels.
-
Season both sides generously with salt and pepper.
3. Sear the Steak
-
Heat a cast-iron skillet over high heat.
-
Add olive oil.
-
Place steaks in the pan and sear 3–4 minutes per side.
For extra flavor:

Add butter, garlic, and thyme.
-
Tilt pan and spoon the butter over the steak repeatedly for 1–2 minutes.
4. Rest the Steak
Transfer steak to a plate and let it rest for 5–8 minutes.
This keeps the meat juicy and tender.
5. Make the Peppercorn Sauce
In the same pan:

Melt 1 tbsp butter.

Add chopped shallots and cook 2 minutes.

Add crushed peppercorns and stir.
-
Pour in beef broth and simmer until reduced by half.

Stir in:

heavy cream
-
Dijon mustard
-
Worcestershire sauce
-

Simmer 3–4 minutes until the sauce thickens.
Taste and adjust salt if needed.
6. Slice and Plate

Slice steak against the grain.

Arrange on a plate with roasted potatoes.

Spoon creamy peppercorn sauce over the steak.

Garnish with chopped parsley.
