Pan-Seared Steak with Creamy Peppercorn Sauce & Roasted Potatoes

Ingredients

For the Steak

  • 2 ribeye or sirloin steaks (about 250–300 g / 8–10 oz each)

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 3 garlic cloves, crushed

  • 1 tsp coarse salt

  • 1 tsp freshly ground black pepper

  • 1 sprig fresh thyme or rosemary


For the Roasted Potatoes

  • 500 g (1 lb) baby potatoes, halved

  • 2 tbsp olive oil

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tbsp chopped parsley (for garnish)


For the Creamy Peppercorn Sauce

  • 1 tbsp butter

  • 1 small shallot or 1/2 onion, finely chopped

  • 1 tbsp crushed black peppercorns

  • 1/2 cup beef broth

  • 1/2 cup heavy cream

  • 1 tsp Dijon mustard

  • 1 tbsp Worcestershire sauce

  • Salt to taste

1. Roast the Potatoes

  1. Preheat oven to 200°C (400°F).

  2. In a bowl, toss potatoes with:

    • olive oil

    • garlic powder

    • paprika

    • salt

    • black pepper

  3. Spread on a baking tray.

  4. Roast for 25–30 minutes, turning halfway until golden and crispy.


2. Prepare the Steak

  1. Remove steaks from refrigerator 20 minutes before cooking.

  2. Pat dry with paper towels.

  3. Season both sides generously with salt and pepper.


3. Sear the Steak

  1. Heat a cast-iron skillet over high heat.

  2. Add olive oil.

  3. Place steaks in the pan and sear 3–4 minutes per side.

For extra flavor:

  • Add butter, garlic, and thyme.

  • Tilt pan and spoon the butter over the steak repeatedly for 1–2 minutes.


4. Rest the Steak

Transfer steak to a plate and let it rest for 5–8 minutes.
This keeps the meat juicy and tender.


5. Make the Peppercorn Sauce

In the same pan:

  1. Melt 1 tbsp butter.

  2. Add chopped shallots and cook 2 minutes.

  3. Add crushed peppercorns and stir.

  4. Pour in beef broth and simmer until reduced by half.

  5. Stir in:

    • heavy cream

    • Dijon mustard

    • Worcestershire sauce

  6. Simmer 3–4 minutes until the sauce thickens.

Taste and adjust salt if needed.


6. Slice and Plate

  1. Slice steak against the grain.

  2. Arrange on a plate with roasted potatoes.

  3. Spoon creamy peppercorn sauce over the steak.

  4. Garnish with chopped parsley.


Serve With

  • Fresh salad

  • Red wine

  • Toasted bread
