Cheesy Beef & Potato Burrito

Ingredients

For the Filling

  • 500 g (1 lb) ground beef

  • 2 cups diced potatoes (small cubes)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp paprika

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp black pepper

  • 1 tsp salt (adjust to taste)

  • 1 tbsp tomato paste

  • 2 tbsp cooking oil

For the Burrito

  • 4 large flour tortillas

  • 1 ½ cups shredded cheddar cheese

  • 1/2 cup mozzarella cheese (for extra melt)

  • 1/4 cup sour cream (optional)

Optional Toppings / Sauce

  • Salsa

  • Guacamole

  • Chopped cilantro

  • Hot sauce


Instructions

1. Cook the Potatoes

  1. Heat 1 tablespoon oil in a skillet over medium heat.

  2. Add diced potatoes.

  3. Cook for 8–10 minutes, stirring occasionally until golden and crispy.

  4. Remove from pan and set aside.


2. Cook the Beef Filling

  1. In the same skillet, add another 1 tablespoon oil.

  2. Sauté onion for 2–3 minutes until softened.

  3. Add minced garlic and cook 30 seconds.

  4. Add ground beef and cook until browned (about 5–6 minutes).

  5. Stir in:

    • paprika

    • chili powder

    • cumin

    • salt

    • black pepper

    • tomato paste

  6. Mix well and cook for 2 minutes to develop flavor.


3. Combine the Filling

  1. Add the crispy potatoes back into the pan.

  2. Mix with the beef.

  3. Cook together for 2–3 minutes.

The filling should be savory, slightly spicy, and hearty.


4. Assemble the Burritos

  1. Warm tortillas in a pan or microwave for 20 seconds so they are flexible.

  2. Place tortilla flat on a surface.

  3. Add:

    • beef & potato filling

    • shredded cheddar

    • mozzarella

    • sour cream (optional)


5. Wrap the Burrito

  1. Fold in the sides of the tortilla.

  2. Roll tightly from the bottom up.


6. Toast the Burrito (Important for texture)

  1. Place the burrito seam-side down in a hot skillet.

  2. Toast for 2–3 minutes per side until golden brown and crispy.

This step creates the grilled burrito texture like in the photo.


Serve

Slice in half and serve with:

  • Salsa

  • Sour cream

  • Guacamole

  • Extra hot sauce
