Spinach & Cheese Stuffed Beef Tenderloin đŸ„©đŸ§€đŸŒż

Ingredients

  • 800 g (1.5–2 lb) beef tenderloin (whole piece)

  • 1 cup fresh spinach (chopped)

  • 120–150 g mozzarella or cream cheese

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder (optional)

  • Kitchen twine or toothpicks


Instructions

1. Prepare the Filling

  • Heat olive oil in a pan over medium heat.

  • Add garlic and sauté for 30 seconds.

  • Add spinach and cook until wilted.

  • Remove from heat and let cool.

  • Mix spinach with cheese until combined.


2. Prepare the Beef

  • Preheat oven to 400°F (200°C).

  • Using a sharp knife, slice the beef lengthwise (do not cut all the way through).

  • Open it like a book.

  • Season both sides with salt, pepper, and garlic powder.


3. Stuff and Roll

  • Spread the spinach-cheese mixture evenly inside.

  • Roll the beef tightly.

  • Secure with kitchen twine or toothpicks.


4. Sear

  • Heat a skillet over medium-high heat.

  • Sear the beef on all sides until browned (about 2–3 minutes per side).


5. Roast

  • Transfer to oven.

  • Roast for 15–20 minutes for medium-rare
    (Internal temp: 130–135°F / 54–57°C).


6. Rest & Serve

  • Let rest for 10 minutes before slicing.

  • Cut into thick rounds and serve.


Tips

  • For extra flavor, add Parmesan to the filling.

  • You can wrap the outside with bacon for a richer version.

  • Always rest the meat before slicing to keep it juicy.
