800 g (1.5–2 lb) beef tenderloin (whole piece)
1 cup fresh spinach (chopped)
120–150 g mozzarella or cream cheese
2 cloves garlic, minced
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp garlic powder (optional)
Kitchen twine or toothpicks

Heat olive oil in a pan over medium heat.
Add garlic and sauté for 30 seconds.
Add spinach and cook until wilted.
Remove from heat and let cool.
Mix spinach with cheese until combined.
Preheat oven to 400°F (200°C).
Using a sharp knife, slice the beef lengthwise (do not cut all the way through).
Open it like a book.
Season both sides with salt, pepper, and garlic powder.
Spread the spinach-cheese mixture evenly inside.
Roll the beef tightly.
Secure with kitchen twine or toothpicks.
Heat a skillet over medium-high heat.
Sear the beef on all sides until browned (about 2–3 minutes per side).
Transfer to oven.
Roast for 15–20 minutes for medium-rare
(Internal temp: 130–135°F / 54–57°C).
Let rest for 10 minutes before slicing.
Cut into thick rounds and serve.
For extra flavor, add Parmesan to the filling.
You can wrap the outside with bacon for a richer version.
