Halloumi Apple Salad with Cranberries

Ingredients

Salad

  • 200 g halloumi cheese, sliced into thick pieces

  • 4 cups mixed salad greens (arugula, baby spinach, lettuce)

  • 1 apple, thinly sliced

  • ½ cup fresh or dried cranberries

  • ¼ cup crumbled feta cheese (optional)

  • 2 tbsp chopped walnuts or pecans (optional)

  • 1 tbsp olive oil (for frying)

Dressing

  • 3 tbsp olive oil

  • 1 tbsp honey or maple syrup

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • Salt and black pepper to taste


Instructions

1. Make the Dressing

In a small bowl, whisk together:

  • Olive oil

  • Honey

  • Lemon juice

  • Dijon mustard

  • Salt and pepper
    Set aside.


2. Fry the Halloumi

  • Heat 1 tbsp olive oil in a pan over medium heat.

  • Add halloumi slices.

  • Fry 2–3 minutes per side until golden brown and crispy.

  • Remove from heat.


3. Assemble the Salad

In a large bowl combine:

  • Mixed greens

  • Apple slices

  • Cranberries

  • Nuts and feta (optional)


4. Finish & Serve

  • Place warm halloumi on top.

  • Drizzle dressing over salad.

  • Toss lightly and serve immediately.


Tips

  • Add grilled chicken for extra protein.

  • Substitute pear for apple if desired.

  • Best served warm with freshly fried halloumi.
