2 servings
200 g halloumi cheese, sliced into thick pieces
4 cups mixed salad greens (arugula, baby spinach, lettuce)
1 apple, thinly sliced
½ cup fresh or dried cranberries
¼ cup crumbled feta cheese (optional)
2 tbsp chopped walnuts or pecans (optional)
1 tbsp olive oil (for frying)
3 tbsp olive oil
1 tbsp honey or maple syrup
1 tbsp lemon juice
1 tsp Dijon mustard
Salt and black pepper to taste

In a small bowl, whisk together:
Olive oil
Honey
Lemon juice
Dijon mustard
Salt and pepper
Set aside.
Heat 1 tbsp olive oil in a pan over medium heat.
Add halloumi slices.
Fry 2–3 minutes per side until golden brown and crispy.
Remove from heat.
In a large bowl combine:
Mixed greens
Apple slices
Cranberries
Nuts and feta (optional)
Place warm halloumi on top.
Drizzle dressing over salad.
Toss lightly and serve immediately.
Add grilled chicken for extra protein.
Substitute pear for apple if desired.
Best served warm with freshly fried halloumi.
