2–3 servings
1 kg fresh clams
5 cloves garlic, minced
2 red chilies, sliced (adjust to taste)
2 tbsp cooking oil
2 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp chili sauce (or chili paste)
1 tsp sugar
½ tsp black pepper
2 tbsp water (or clam juice)
2 tbsp chopped green onions

Soak clams in salted water for 30 minutes to remove sand.
Rinse thoroughly and drain.
Heat oil in a wok or large pan over medium-high heat.
Add garlic and chili slices.
Stir-fry until fragrant (about 30 seconds).
Add clams and toss quickly.
Add oyster sauce, soy sauce, chili sauce, sugar, and black pepper.
Pour in 2 tbsp water.
Cover and cook 4–6 minutes until clams open.
Stir occasionally so sauce coats evenly.
Discard any clams that do not open.
Sprinkle green onions.
Serve hot with steamed rice or crusty bread.
Add butter for richer flavor.
A splash of lime juice brightens the dish.
Do not overcook or clams will become chewy.
