Spicy Garlic Stir-Fried Clams

Ingredients

  • 1 kg fresh clams

  • 5 cloves garlic, minced

  • 2 red chilies, sliced (adjust to taste)

  • 2 tbsp cooking oil

  • 2 tbsp oyster sauce

  • 1 tbsp soy sauce

  • 1 tbsp chili sauce (or chili paste)

  • 1 tsp sugar

  • ½ tsp black pepper

  • 2 tbsp water (or clam juice)

  • 2 tbsp chopped green onions

1. Clean the Clams

  • Soak clams in salted water for 30 minutes to remove sand.

  • Rinse thoroughly and drain.


2. Cook the Aromatics

  • Heat oil in a wok or large pan over medium-high heat.

  • Add garlic and chili slices.

  • Stir-fry until fragrant (about 30 seconds).


3. Stir-Fry the Clams

  • Add clams and toss quickly.

  • Add oyster sauce, soy sauce, chili sauce, sugar, and black pepper.

  • Pour in 2 tbsp water.


4. Cook Until Opened

  • Cover and cook 4–6 minutes until clams open.

  • Stir occasionally so sauce coats evenly.

  • Discard any clams that do not open.


5. Finish & Serve

  • Sprinkle green onions.

  • Serve hot with steamed rice or crusty bread.


Tips

  • Add butter for richer flavor.

  • A splash of lime juice brightens the dish.

  • Do not overcook or clams will become chewy.
