Grilled Chicken & Fresh Veggie Salad: A Wholesome Treat?

This light, fresh, and flavorful salad is perfect for a healthy meal. Packed with protein from grilled chicken and a variety of colorful veggies, it’s both satisfying and nutritious.


Ingredients (Serves 1-2)

For the Grilled Chicken:

  • 1 boneless, skinless chicken breast πŸ—

  • 1 tbsp olive oil

  • ½ tsp garlic powder πŸ§„

  • ½ tsp paprika

  • Salt & black pepper (to taste)

For the Salad:

  • 1 cup lettuce, chopped πŸ₯¬

  • ½ cup cucumber, sliced πŸ₯’

  • ½ cup cherry tomatoes, halved πŸ…

  • ½ cup broccoli florets πŸ₯¦

  • ½ small beet, thinly sliced (for a pop of color & earthy flavor) ❀️

For the Dressing (Optional):

Instructions

1️⃣ Grill the Chicken

  1. Rub the chicken breast with olive oil, garlic powder, paprika, salt, and black pepper.

  2. Heat a grill pan or skillet over medium-high heat.

  3. Grill the chicken for 5-6 minutes per side, or until fully cooked (internal temp: 165°F / 75°C).

  4. Remove from heat and let it rest for 5 minutes before slicing.

2️⃣ Prepare the Salad

  1. In a large bowl, combine lettuce, cucumber, cherry tomatoes, broccoli, and sliced beets.

  2. Toss gently to mix.

3️⃣ Assemble & Serve

  1. Slice the grilled chicken and place it on top of the salad.

  2. Drizzle with balsamic vinaigrette (if using).

  3. Garnish with fresh parsley and enjoy!
