Cajun Beef & Roasted Zucchini Bowl

 

Ingredients

Here’s what you’ll need for this delicious summer bowl:

For the Cajun Beef:

  • 1 lb (450g) lean ground beef

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 1 tbsp Cajun seasoning (store-bought or homemade)

  • ½ tsp smoked paprika

  • ½ tsp cayenne pepper (optional for extra heat)

  • 1 tbsp tomato paste

  • ½ cup beef broth

  • Salt & black pepper to taste

For the Roasted Zucchini:

  • 2 medium zucchinis, sliced into rounds

  • 1 tbsp olive oil

  • ½ tsp Cajun seasoning

  • ½ tsp garlic powder

  • Salt & black pepper to taste

For Serving:

  • 2 cups cooked rice (brown rice, jasmine, or cauliflower rice for a low-carb option)

  • ½ cup cherry tomatoes, halved

  • ¼ cup fresh parsley, chopped

  • 1 lime, cut into wedges

  • Optional: Sliced avocado, crumbled feta, or a drizzle of spicy mayo

Step-by-Step Instructions

Step 1: Roast the Zucchini

  1. Preheat your oven to 400°F (200°C).

  2. Line a baking sheet with parchment paper and spread out the zucchini slices.

  3. Drizzle with olive oil, then sprinkle with Cajun seasoning, garlic powder, salt, and pepper.

  4. Toss to coat evenly and roast for 15–20 minutes until tender and slightly golden.

Step 2: Cook the Cajun Beef

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add chopped onion and cook for 2–3 minutes until soft.

  3. Stir in minced garlic, then add ground beef. Cook until browned, breaking it apart with a wooden spoon.

  4. Sprinkle in Cajun seasoning, smoked paprika, and cayenne pepper (if using). Stir well.

  5. Add tomato paste and beef broth. Stir and let simmer for 5 minutes until slightly thickened.

  6. Season with salt and black pepper to taste.

Step 3: Assemble the Bowl

  1. Divide the cooked rice into 4 serving bowls.

  2. Spoon the spicy Cajun beef over the rice.

  3. Top with roasted zucchini, cherry tomatoes, and fresh parsley.

  4. Add lime wedges on the side for a fresh, tangy finish.

  5. Optional: Garnish with avocado slicesfeta cheese, or a spicy mayo drizzle.
