Pan-Fried Mochi
Ingredients:
- 1 cup + 3 tbsp (150g) glutinous rice flour
- 100 ml (100ml) hot water
- 2 to 3 tbsp (45g) granulated sugar
- 40 ml (40ml) coconut milk
- 2¼ tsp (10g) vegetable oil
Instructions:
1. Measure out the glutinous rice flour in a bowl and set it aside.
2. In a pot, combine water, sugar, coconut milk, and oil. Bring to a simmer.
3. Pour the simmering mixture into the glutinous rice flour. Stir with spatula or chopsticks until it forms a ball. Knead for about 10 minutes until smooth and elastic. Add more flour or water if needed.
4. Divide the dough into 6-8 portions, roll into balls, and flatten slightly.
5. Heat a non-stick skillet over medium-low heat with a thin layer of oil. Cook until golden brown, about 4-5 minutes each side.
You can add fillings like bean paste, custard, or cheese before pan-frying, or make it savory by replacing sugar with salt.
