Vegetable Beef Soup

Ingredients

  • 1 lb ground beef

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, sliced

  • 2 potatoes, diced

  • 1 bell pepper, diced

  • 1 cup frozen green peas

  • 4 cups beef broth

  • 1 tbsp tomato paste

  • 1 tsp dried thyme

  • Salt and pepper to taste

Instructions

  1. Cook the Beef:

    • In a large pot over medium heat, cook the ground beef until browned.

    • Drain excess fat if needed.

  2. Sauté the Aromatics:

    • Add diced onion and minced garlic to the pot.

    • Sauté for 2-3 minutes until fragrant.

  3. Add Vegetables & Seasonings:

    • Stir in the sliced carrots, diced potatoes, and diced bell pepper.

    • Add the tomato paste and dried thyme.

    • Season with salt and pepper to taste.

  4. Simmer the Soup:

    • Pour in the beef broth and bring to a boil.

    • Reduce heat to low, cover, and let simmer for about 25-30 minutes, or until vegetables are tender.

  5. Add Green Peas:

    • Stir in the frozen green peas and cook for another 5 minutes.

  6. Serve & Enjoy:

    • Taste and adjust seasoning if needed.

    • Serve hot with crusty bread or crackers.
