
Vegetable Beef Soup
Ingredients

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced
-
2 carrots, sliced
-
2 potatoes, diced
-
1 bell pepper, diced
-
1 cup frozen green peas
-
4 cups beef broth
-
1 tbsp tomato paste
-
1 tsp dried thyme
-
Salt and pepper to taste
Instructions

Cook the Beef:
-
In a large pot over medium heat, cook the ground beef until browned.

Drain excess fat if needed.

Sauté the Aromatics:
-
Add diced onion and minced garlic to the pot.

Sauté for 2-3 minutes until fragrant.

Add Vegetables & Seasonings:
-
Stir in the sliced carrots, diced potatoes, and diced bell pepper.

Add the tomato paste and dried thyme.
-
Season with salt and pepper to taste.

Simmer the Soup:

Pour in the beef broth and bring to a boil.

Reduce heat to low, cover, and let simmer for about 25-30 minutes, or until vegetables are tender.

Add Green Peas:

Stir in the frozen green peas and cook for another 5 minutes.

Serve & Enjoy:

Taste and adjust seasoning if needed.

Serve hot with crusty bread or crackers.
