Vegan-Friendly Mayonnaise
Ingredients:
- 1/2 cup soy milk
- 1/2 cup avocado oil
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1 tablespoon vinegar

Instructions:
1. Put soy milk, sugar, salt, and vinegar in a food processor or use a hand blender.

2. Slowly add the avocado oil while pulsing and blending until the mixture thickens and becomes creamy.

3. Transfer the mayonnaise to a jar or airtight container and store in the fridge for up to one week.
